Rinse lentil mix and discard water. In a large pot over medium heat, add oil, add veggies (seasonal or from list to left) and saute veggies for 5 minutes, add spice packet and saute for 1 more minute. Add lentils and farro to pot with 3 cups fresh water and 4 cups veggie, mushroom or chicken broth. Bring to a boil, cover and reduce to a simmer on medium-low for 45 minutes. For a nice twist, top soup with shaved parmesan or a dollop of plain Greek yogurt before serving.
